Ingredients

The main ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 small zucchini, chopped
  • 1 bulb fennel, sliced thin
  • 1 can artichoke hearts, drained and chopped
  • 500 g store bought potato gnocchi
  • 4 small shallots, sliced thin

The dressing

  • ½ cup olive oil
  • ½ tbsp dried oregano
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 tbsp orange and/or blood orange juice
  • ½ tbsp red wine vinegar
  • 2 small garlic cloves, pressed

The toppings

  • 3 cups arugula
  • ½ cup finely chopped green olives
  • 100 g goat cheese, crumbled

Instructions

  1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. Mix the Greek dressing ingredients together and set aside.
  3. Add the chickpeas, zucchini, fennel, artichokes, gnocchi, and shallots to the sheet pan.
  4. Drizzle the dressing over the ingredients and toss to coat.
  5. Bake for 25 minutes, tossing gently at the 15-minute mark.
  6. Crumble goat cheese over the top and bake for an additional 5 minutes.
  7. Top with arugula and green olives, drizzle with olive oil and salt if desired, and serve immediately.
