Baked Gnocchi

The dressing

Instructions
- Preheat the oven to 400°F and line a large baking sheet with parchment paper.
- Mix the Greek dressing ingredients together and set aside.
- Add the chickpeas, zucchini, fennel, artichokes, gnocchi, and shallots to the sheet pan.
- Drizzle the dressing over the ingredients and toss to coat.
- Bake for 25 minutes, tossing gently at the 15-minute mark.
- Crumble goat cheese over the top and bake for an additional 5 minutes.
- Top with arugula and green olives, drizzle with olive oil and salt if desired, and serve immediately.
