Garlic Parmesan Scalloped Potatoes

Ingredients

The potatoes

  • 2 large Russet Potatoes

The sauce

  • 2 tbsp Unsalted Butter
  • ½ cup finely chopped Yellow Onion
  • 3 cloves Garlic
  • ½ tsp dried or chopped fresh Thyme
  • cup Heavy Cream
  • cup finely grated or shredded Parmesan Reggiano
  • to taste Salt & freshly cracked Black Pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Peel and slice the potatoes into ⅛ inch thick slices and soak in cold water for 10 minutes.
  3. Drain and dry the potatoes thoroughly.
  4. Coat a baking dish with butter and layer a third of the onions at the bottom.
  5. Layer half of the potatoes on top, season with salt, pepper, and half of the thyme.
  6. Pour half of the cream over the potatoes and sprinkle with half of the garlic and parmesan.
  7. Add another third of the onions and the second layer of potatoes, seasoning again.
  8. Pour the remaining cream over the top, add the remaining onions, garlic, and parmesan.
  9. Scatter butter cubes over the top, cover with foil, and bake for 30 minutes.
  10. Remove the foil and bake for another 25 minutes, then broil for 5 minutes for a golden top.
  11. Let cool for 10 minutes before serving.
