Instructions
- Blend the cashews, water, maple syrup, and vanilla until smooth.
- Pour the mixture into an ice pop mold and freeze until solid, about 6 to 8 hours.
- Run the mold under hot water to remove the ice pops and lay them on a parchment-lined baking sheet.
- Prepare the chocolate coating by mixing cocoa powder, maple syrup, and coconut oil until smooth.
- Spread the chocolate coating on one side of the bars, then flip and coat the other side.
- Once the chocolate hardens, the bars are ready to eat or can be stored in the freezer.
