Ingredients

The cake

  • cups cake flour

  • 2 large egg whites
  • cup sour cream
  • 1 teaspoon pure vanilla extract
  • cup whole milk
  • ½ cup sprinkles

Vanilla Buttercream

  • ¾ cup unsalted butter
  • 3 cups confectioners’ sugar
  • 3 Tablespoons heavy cream
  • 1 teaspoon pure vanilla extract
  • to taste salt
  • optional sprinkles for garnish

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9-inch round cake pan.
  2. Whisk together the cake flour, baking powder, baking soda, and salt in a bowl.
  3. In a mixer, beat the softened butter until creamy, then add the sugar and mix until combined.
  4. Add the egg whites, sour cream, and vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  6. Fold in the sprinkles gently.
  7. Pour the batter into the prepared cake pan and bake for 27-31 minutes.
  8. Allow the cake to cool completely in the pan on a wire rack.
  9. For the buttercream, beat the softened butter until creamy, then add the confectioners’ sugar, heavy cream, and vanilla extract, mixing until fluffy.
  10. Spread the buttercream over the cooled cake and top with additional sprinkles if desired.
