Ingredients

The cake

  • 3 and ¾ cups cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 and ¼ cups unsalted butter
  • 2 cups granulated sugar
  • cup vegetable oil
  • 4 large eggs
  • 2 large egg whites
  • 3 teaspoons pure vanilla extract
  • 1 and ½ cups buttermilk
  • ¾ cup rainbow sprinkles

The vanilla buttercream

  • 1 and ½ cups unsalted butter
  • 5 and ½ cups confectioners’ sugar
  • cup heavy cream
  • 3 teaspoons pure vanilla extract
  • teaspoon salt
  • optional additional sprinkles for garnish

Instructions

  1. Preheat the oven and prepare the cake pans with grease and parchment paper.
  2. Whisk together the dry ingredients in a bowl.
  3. Cream the butter and sugar together until fluffy, then add oil, eggs, and vanilla.
  4. Incorporate the dry ingredients and buttermilk in three additions, mixing gently.
  5. Fold in the rainbow sprinkles and divide the batter into the prepared pans.
  6. Bake the cakes until a toothpick comes out clean, then cool in the pans.
  7. Make the frosting by beating the butter and gradually adding the sugar, cream, vanilla, and salt.
  8. Level the cakes and assemble them with frosting between layers and around the sides.
  9. Chill the cake to set the crumb coat, then apply the final layer of frosting and garnish.
  10. Serve or store the cake appropriately.
