Ingredients

The cupcake batter

  • 1 and ¾ cups cake flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 3 large egg whites
  • 2 teaspoons pure vanilla extract
  • ½ cup full-fat sour cream
  • ½ cup whole milk
  • ½ cup rainbow sprinkles

The frosting

  • to taste vanilla buttercream or your choice of frosting

Instructions

  1. Preheat the oven to 350°F (177°C) and line a muffin pan with cupcake liners.
  2. Whisk together the cake flour, baking powder, baking soda, and salt.
  3. Beat the softened butter and sugar until creamy, then add egg whites and vanilla, mixing well.
  4. Incorporate the sour cream, then add the dry ingredients gradually, mixing until just combined.
  5. Slowly add the milk and mix until smooth, then gently fold in the sprinkles.
  6. Fill the cupcake liners 2/3 full with batter and bake for 19-22 minutes until a toothpick comes out clean.
  7. Allow the cupcakes to cool completely before frosting with buttercream.
