Ingredients

The cupcakes

  • ¾ cup all-purpose flour
  • ¾ cup cake flour
  • tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 large egg whites
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • ¼ cup milk (preferably whole)
  • ¼ cup rainbow jimmies sprinkles
  • as needed for sprinkling rainbow nonpareils

The frosting

  • 1 cup butter, nearly at room temperature
  • 3 cups powdered sugar
  • 1½ - 2 Tbsp heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Sift together the all-purpose flour, cake flour, baking powder, and salt in a mixing bowl.
  3. In a separate bowl, whip the butter and sugar until pale and fluffy.
  4. Mix in the egg, then add the egg whites one at a time, blending well.
  5. Add the vanilla and almond extracts.
  6. Alternately mix in the dry ingredients and milk into the butter mixture until just combined.
  7. Gently fold in the sprinkles.
  8. Divide the batter among 12 paper-lined muffin cups, filling each about ¾ full.
  9. Bake for 17-19 minutes until a toothpick comes out clean.
  10. Allow to cool in the muffin tin for a few minutes, then transfer to a wire rack to cool completely.
  11. For the frosting, whip the butter until nearly white and fluffy.
  12. Add powdered sugar, heavy cream, and vanilla extract, mixing until light and fluffy.
  13. Frost the cooled cupcakes as desired and sprinkle with nonpareils.
