Instructions
- Preheat the oven to 375ºF and prepare a baking sheet with parchment paper.
- Cream the softened butter and granulated sugar together until light and fluffy.
- Add the vanilla extract, almond extract, and egg to the mixture and beat until combined.
- In a separate bowl, sift together the flour, cornstarch, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Gently fold in the sprinkles, being careful not to overmix.
- Scoop the dough onto the prepared baking sheet, spacing them about 1 ½ inches apart.
- Bake for 10-14 minutes until the edges are light golden brown.
- Let the cookies cool on the baking sheet for 2 minutes before transferring to a cooling rack.
