Vanilla Buttercream Frosting
Instructions
- Preheat the oven to 350 degrees and prepare two 9-inch round cake pans.
- Sift the cake flour, baking powder, and salt together in a bowl.
- Cream the butter and sugar in a stand mixer until pale and fluffy.
- Mix in the vegetable oil, egg yolks, vanilla, and almond extract.
- Whip the egg whites in a separate bowl until medium-stiff peaks form.
- Gradually add the flour mixture and milk to the butter mixture, alternating between them.
- Fold in the whipped egg whites and rainbow sprinkles gently.
- Divide the batter between the prepared pans and bake for 30-35 minutes until a toothpick comes out clean.
- Cool the cakes in the pans for 20 minutes, then invert onto wire racks to cool completely.
- Frost the cooled cakes with the buttercream frosting and add sprinkles if desired.
