Homemade Funfetti Cake

The Frosting

Instructions
- Preheat the oven to 350°F and prepare two 9-inch round cake pans with nonstick spray and flour.
- In a medium bowl, whisk together the milk, egg whites, and vanilla until blended.
- In a stand mixer, combine cake flour, sugar, baking powder, and salt, mixing on low speed.
- Add the butter and mix until the mixture resembles moist crumbs.
- Add most of the milk mixture to the crumbs and beat for 1.5 minutes, then add the remaining milk and mix for another 30 seconds.
- Scrape the sides of the bowl and mix for an additional 20 seconds, then fold in the sprinkles.
- Divide the batter between the prepared pans and smooth the tops.
- Bake for 23-25 minutes, or until a toothpick comes out clean. Let the cakes cool in the pans for a few minutes before transferring to wire racks.
- To make the frosting, cream the butter until smooth, then gradually add the confectioners sugar, vanilla, and salt, mixing until combined.
- Adjust the consistency of the frosting with milk or cream as needed.
- Trim the tops of the cakes for evenness, frost the top of one cake layer, and stack the second layer on top.
- Frost the top and sides of the cake, then decorate with additional sprinkles.
