Ingredients

The cake

  • ½ cup unsalted butter, softened to room temperature
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • cup white chocolate chips
  • ½ cup rainbow sprinkles

Vanilla Almond Frosting

  • ½ cup unsalted butter, softened to room temperature
  • cups confectioners’ sugar
  • 2 tablespoons heavy cream or half-and-half
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon almond extract
  • to taste salt
  • optional extra sprinkles for decorating

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9-inch pie dish or round cake pan with nonstick spray.
  2. In a large bowl, cream the softened butter and granulated sugar until fluffy, then beat in the egg, egg yolk, and vanilla.
  3. In a separate bowl, whisk together the flour, salt, baking powder, baking soda, and cornstarch.
  4. Gradually add the dry ingredients to the wet mixture, mixing until combined, then fold in the white chocolate chips and sprinkles.
  5. Press the dough evenly into the prepared pan and bake for 25-30 minutes until lightly browned on top.
  6. Allow the cake to cool completely before frosting.
  7. For the frosting, beat the softened butter until creamy, then add confectioners’ sugar, cream, vanilla, and almond extract, mixing until smooth.
  8. Frost the cooled cake as desired and serve, optionally with extra sprinkles on top.
