Ingredients

Cookie dough

  • 1 ¾ cups almond flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 unit egg
  • cup cashew butter
  • cup maple syrup
  • ½ tsp almond extract
  • ¼ cup sprinkles

Frosting

  • 1 cup powdered sugar
  • 1 tbsp water
  • ½ tsp vanilla
  • to taste unit more sprinkles

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the dry ingredients (almond flour, baking soda, and salt) in one bowl and set aside.
  3. In another bowl, mix the wet ingredients (egg, cashew butter, almond extract, and maple syrup).
  4. Combine the wet and dry ingredients until well mixed, then chill the dough in the fridge for 30 minutes.
  5. Add sprinkles to the chilled dough, roll into balls, and flatten slightly on the baking sheet.
  6. Bake for 13-15 minutes or until fully cooked.
  7. While cooling, mix the frosting ingredients (powdered sugar, water, and vanilla).
  8. Once cookies are completely cooled, frost them and add more sprinkles as desired.
  9. Store in the fridge.
