Easy Gluten-Free Funfetti Cookies

Ingredients

  • 1 stick unsalted butter
  • ½ cup cane sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1⅓ cups gluten-free flour blend
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • a pinch fine salt
  • ¼ cup rainbow sprinkles

Instructions

  1. Cream together the butter, cane sugar, and brown sugar in a mixing bowl.
  2. Add the egg and vanilla, stirring until combined.
  3. Mix in the gluten-free flour, baking soda, baking powder, and salt until well combined.
  4. Fold in the rainbow sprinkles.
  5. Cover the dough and chill in the refrigerator for 30 minutes to 1 hour.
  6. Preheat the oven to 350℉ and line two cookie sheets with parchment paper.
  7. Scoop out dough into 1½ to 2 tablespoon-sized balls and place on the baking sheets, pressing in a few extra sprinkles.
  8. Bake for 12-14 minutes until light golden brown on the bottom and edges.
  9. Let cool for 5 minutes before transferring to a cooling rack.
