Easy Gluten-Free Funfetti Cookies

Instructions
- Cream together the butter, cane sugar, and brown sugar in a mixing bowl.
- Add the egg and vanilla, stirring until combined.
- Mix in the gluten-free flour, baking soda, baking powder, and salt until well combined.
- Fold in the rainbow sprinkles.
- Cover the dough and chill in the refrigerator for 30 minutes to 1 hour.
- Preheat the oven to 350℉ and line two cookie sheets with parchment paper.
- Scoop out dough into 1½ to 2 tablespoon-sized balls and place on the baking sheets, pressing in a few extra sprinkles.
- Bake for 12-14 minutes until light golden brown on the bottom and edges.
- Let cool for 5 minutes before transferring to a cooling rack.
