Ingredients

The cookie base

  • 1 ⅔ cups Almond Flour
  • 3 tablespoons Coconut Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cream of Tartar
  • ½ teaspoon Salt
  • cup Coconut Oil (melted and cooled)
  • cup Maple Syrup
  • 1 tablespoon Almond Extract
  • ½ cup Rainbow Sprinkles (plus extra for topping)

The optional topping

  • ½ cup Cane Sugar (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the almond flour, coconut flour, baking soda, cream of tartar, and salt.
  3. Add the melted coconut oil, maple syrup, and almond extract, and mix well.
  4. Fold in the rainbow sprinkles.
  5. Use a cookie scoop to form 12-14 cookies, adjusting the size as desired.
  6. Roll each cookie in cane sugar if using.
  7. Flatten each cookie slightly with your hand or a glass.
  8. Press additional sprinkles on top of each cookie.
  9. Bake for 9-10 minutes until lightly golden around the edges.
  10. Let cool for 10-15 minutes before enjoying.
