Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the almond flour, coconut flour, baking soda, cream of tartar, and salt.
- Add the melted coconut oil, maple syrup, and almond extract, and mix well.
- Fold in the rainbow sprinkles.
- Use a cookie scoop to form 12-14 cookies, adjusting the size as desired.
- Roll each cookie in cane sugar if using.
- Flatten each cookie slightly with your hand or a glass.
- Press additional sprinkles on top of each cookie.
- Bake for 9-10 minutes until lightly golden around the edges.
- Let cool for 10-15 minutes before enjoying.
