Instructions
- 1. Preheat a non-stick electric griddle to about 375°F.
- 2. In a measuring cup, combine milk and lemon juice, whisk together, and let rest for 3 minutes.
- 3. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt, making a well in the center.
- 4. In a separate large bowl, whisk eggs, then add milk mixture, almond extract, and vanilla extract, mixing until blended.
- 5. Stir in melted butter, then pour the milk mixture into the well of the flour mixture and whisk to combine slightly.
- 6. Add sprinkles and whisk until the batter is blended but still slightly lumpy.
- 7. If needed, spritz the griddle with non-stick cooking spray, then pour out batter in rounds about ¼ cup each.
- 8. Cook until golden brown on the bottom, then flip and cook until golden brown on the other side.
- 9. Serve warm with vanilla glaze, whipped cream, and more sprinkles.
- 10. For the glaze, whisk together powdered sugar, half and half, melted butter, and vanilla until well blended, adding more half and half if needed.
