Instructions
- Preheat the oven to 350°F.
- Pulse the granulated sugar in a food processor until super fine.
- Sift together half of the sugar, cake flour, and salt in a mixing bowl.
- In a large bowl, whisk together egg whites, warm water, vanilla extract, almond extract, and cream of tartar until well combined.
- Switch to a hand mixer and whip the egg white mixture while slowly adding the remaining sugar until medium peaks form.
- Sift the flour mixture over the egg whites and gently fold it in, repeating until fully incorporated.
- Fold in the chopped rainbow jimmies.
- Divide the batter among paper-lined muffin cups, filling each nearly full.
- Bake for 19 to 22 minutes until golden and a toothpick comes out clean.
- Cool completely, then spread cream cheese whipped cream over the cupcakes and top with rainbow sprinkles.
- For the cream cheese whipped cream, whip heavy cream until soft peaks form, then whip cream cheese until light and fluffy.
- Combine the whipped cream with cream cheese, powdered sugar, vanilla extract, and almond extract until stiff peaks form.
