Kale Ground Beef Butternut Squash One Pot Pasta

Ingredients

  • 1 tbsp ghee
  • 1.1 lb lean ground beef
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ½ tsp garlic powder
  • 1 tsp chili pepper flakes
  • 1 small onion, finely chopped
  • 3 cups butternut squash, cut into 1" cubes
  • 3 cups bone broth, warmed
  • 3 cups dry large shells pasta
  • 2 cups packed chopped kale leaves

Instructions

  1. Melt ghee in a sauté pan over medium-high heat.
  2. Add ground beef, salt, pepper, garlic powder, and chili pepper flakes; cook until browned and crispy, about 7-8 minutes.
  3. Stir in chopped onion and cook until softened, about 2 minutes.
  4. Add diced butternut squash and cook for about a minute to coat with flavors.
  5. Pour in bone broth and bring to a boil; add dry pasta and return to a boil.
  6. Cover and simmer until pasta is al dente and broth is mostly gone, about 7-8 minutes.
  7. Remove from heat, stir in chopped kale, cover, and let rest for 3-5 minutes until kale is wilted.
  8. Serve immediately.
