Ingredients

The base

  • 1 pound ground turkey or chicken sausage
  • 1 small butternut squash
  • 1 small red onion
  • 3 cloves garlic
  • 1 medium bunch kale
  • 12 ounces frozen egg noodles

The seasonings

  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground nutmeg
  • teaspoon cayenne pepper
  • 1 tablespoon chopped fresh sage

The liquids

  • ½ cup half-and-half
  • 1 14.5-ounce can low sodium chicken broth

The cheese

  • ½ cup freshly shredded Parmesan cheese

Instructions

  1. Brown the sausage in a skillet and set aside.
  2. Add oil, squash, onion, salt, and pepper to the skillet and cook until the squash is tender.
  3. Stir in garlic, nutmeg, and cayenne, cooking until fragrant.
  4. Add kale and broth, cover, and simmer for 4 minutes.
  5. Stir in noodles and half-and-half, cover, and cook until noodles are tender.
  6. Remove from heat, add sausage, Parmesan, and sage, then season to taste before serving.
