Instructions
- Brown the sausage in a skillet and set aside.
- Add oil, squash, onion, salt, and pepper to the skillet and cook until the squash is tender.
- Stir in garlic, nutmeg, and cayenne, cooking until fragrant.
- Add kale and broth, cover, and simmer for 4 minutes.
- Stir in noodles and half-and-half, cover, and cook until noodles are tender.
- Remove from heat, add sausage, Parmesan, and sage, then season to taste before serving.
