Butternut Squash Noodles with Sausage and Kale

Ingredients

The noodles and vegetables

  • 1 medium butternut squash
  • 2–4 Tbsp. water
  • 2 Tbsp. avocado oil
  • 1 medium red onion
  • 8 oz. mushrooms
  • 2 cloves garlic
  • 1 bunch kale

The protein

  • 14 oz. Kielbasa sausage

Seasonings

  • to taste sea salt
  • optional crushed red pepper
  • optional shredded parmesan cheese

Instructions

  1. Heat 1 Tbsp. of avocado oil in a large skillet over medium heat and sauté the butternut squash noodles for 2-3 minutes.
  2. Add 2 Tbsp. of water, cover, and cook for 10 minutes until tender.
  3. Remove the squash noodles from the skillet and set aside.
  4. In the same skillet, heat the remaining avocado oil over medium-high heat and sauté the sliced red onion for 2-3 minutes.
  5. Add the mushrooms and garlic, cooking for an additional 2-3 minutes until softened.
  6. Add the kielbasa and cook until heated through, about 3-4 minutes.
  7. Stir in the kale and cook until wilted, then add the butternut squash noodles back to the skillet and heat through.
  8. Season with salt and optional crushed red pepper to taste.
