Butternut Squash Noodles with Sausage and Kale

Instructions
- Heat 1 Tbsp. of avocado oil in a large skillet over medium heat and sauté the butternut squash noodles for 2-3 minutes.
- Add 2 Tbsp. of water, cover, and cook for 10 minutes until tender.
- Remove the squash noodles from the skillet and set aside.
- In the same skillet, heat the remaining avocado oil over medium-high heat and sauté the sliced red onion for 2-3 minutes.
- Add the mushrooms and garlic, cooking for an additional 2-3 minutes until softened.
- Add the kielbasa and cook until heated through, about 3-4 minutes.
- Stir in the kale and cook until wilted, then add the butternut squash noodles back to the skillet and heat through.
- Season with salt and optional crushed red pepper to taste.
