Ingredients

  • tablespoons avocado oil
  • 1 medium onion, diced
  • 1 small butternut squash (1½ lbs.), peeled and cut into ¼-inch dice (about 3 cups)
  • 1 medium apple, cored and diced
  • 1 lb ground turkey, chicken or pork
  • ½ teaspoon dried sage
  • ¼ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • ½ teaspoon fine salt
  • 1 pinch nutmeg
  • to taste red pepper flakes
  • 3 cups kale, chard, or spinach, washed and chopped

Instructions

  1. Combine ground meat with sage, thyme, garlic powder, salt, and nutmeg or red pepper flakes in a bowl and set aside.
  2. Heat oil in a large skillet over medium-high heat, then add onion and butternut squash, sautéing for 7-8 minutes.
  3. Add diced apple and cook for an additional 5 minutes.
  4. Move the vegetable mixture to one side, add remaining oil and turkey mixture, cooking until the turkey is no longer pink.
  5. Drain excess liquid if needed, then combine vegetables and sausage.
  6. Place greens on top, cover, and allow to wilt for 1-2 minutes before stirring and serving.
