Bacon Butternut Squash Hash

Instructions
- 1. Preheat the oven to 425°F.
- 2. Cook the chopped bacon in an oven-safe skillet over medium heat until crisp, then remove and drain on paper towels.
- 3. Measure the bacon grease left in the pan and adjust with oil to make a total of 1 tablespoon.
- 4. Add the butternut squash, onion, and apple to the pan, mixing to coat.
- 5. Combine brown sugar, salt, and pepper in a small dish, then sprinkle over the squash mixture.
- 6. Roast in the oven for 20 minutes.
- 7. Add minced garlic, stir, and spread evenly, then roast for another 10 minutes.
- 8. Check the squash for tenderness; if needed, roast for an additional 5 minutes.
- 9. Add the cooked bacon back to the pan and roast for another 5 minutes before serving.
