Ingredients

  • 4 slices center cut bacon, chopped
  • 1 ½ lbs butternut squash, cut into 1-inch cubes
  • 1 medium onion, chopped
  • 1 medium apple, peeled and cubed
  • 1 tablespoon brown sugar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon minced garlic
  • as needed tablespoon canola or vegetable oil

Instructions

  1. 1. Preheat the oven to 425°F.
  2. 2. Cook the chopped bacon in an oven-safe skillet over medium heat until crisp, then remove and drain on paper towels.
  3. 3. Measure the bacon grease left in the pan and adjust with oil to make a total of 1 tablespoon.
  4. 4. Add the butternut squash, onion, and apple to the pan, mixing to coat.
  5. 5. Combine brown sugar, salt, and pepper in a small dish, then sprinkle over the squash mixture.
  6. 6. Roast in the oven for 20 minutes.
  7. 7. Add minced garlic, stir, and spread evenly, then roast for another 10 minutes.
  8. 8. Check the squash for tenderness; if needed, roast for an additional 5 minutes.
  9. 9. Add the cooked bacon back to the pan and roast for another 5 minutes before serving.
