Ingredients

The squash

  • 1 lb butternut squash, peeled and roughly cubed

The seasoning

  • 2 tablespoons butter, melted
  • to taste salt
  • to taste freshly cracked black pepper
  • 2 teaspoons finely chopped parsley leaves
  • 2 tablespoons honey or maple syrup

Instructions

  1. 1. Preheat the oven to 400°F (207°C).
  2. 2. Toss the butternut squash cubes with melted butter, salt, black pepper, parsley, and honey in a large bowl.
  3. 3. Transfer the mixture to a baking sheet lined with parchment paper.
  4. 4. Spread the squash out in a single, even layer and roast for 30 to 45 minutes, or until fork-tender and lightly browned.
