Ingredients

The squash

  • 1 whole butternut squash

The seasoning

  • to taste sea salt
  • to taste freshly ground black pepper
  • for drizzling tablespoons extra-virgin olive oil
  • optional chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. Peel the butternut squash, cut it in half vertically, and scoop out the seeds.
  3. Dice the squash into 1-inch cubes.
  4. Spread the cubed squash on the baking sheet, drizzle with olive oil, and toss with salt and pepper.
  5. Roast in the oven for 30 to 35 minutes until golden brown and tender.
