Instructions
- 1. Preheat the oven to 400°F (204°C).
- 2. Cut off the ends of the squash and peel it.
- 3. Cut the squash in half lengthwise and scoop out the seeds.
- 4. Cut the squash into ¾-inch cubes.
- 5. In a large bowl, toss the squash cubes with olive oil, garlic powder, salt, and pepper.
- 6. Arrange the seasoned squash in a single layer on a baking sheet.
- 7. Roast the squash for 25-35 minutes, flipping halfway through, until tender and caramelized.
