Ingredients

The squash

  • 1 3-lb Butternut squash

The seasoning

  • 2 tbsp Olive oil
  • ½ tsp Garlic powder
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. 1. Preheat the oven to 400°F (204°C).
  2. 2. Cut off the ends of the squash and peel it.
  3. 3. Cut the squash in half lengthwise and scoop out the seeds.
  4. 4. Cut the squash into ¾-inch cubes.
  5. 5. In a large bowl, toss the squash cubes with olive oil, garlic powder, salt, and pepper.
  6. 6. Arrange the seasoned squash in a single layer on a baking sheet.
  7. 7. Roast the squash for 25-35 minutes, flipping halfway through, until tender and caramelized.
