Ingredients

The squash

  • 2 pounds butternut squash, peeled, seeded and cut into ¾ inch cubes

The seasoning mixture

  • tablespoons olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • to taste salt
  • to taste black pepper

For garnish

  • 1 tablespoon chopped parsley (optional)

For cooking

  • as needed cooking spray

Instructions

  1. Preheat the oven to 400°F and coat a sheet pan with cooking spray.
  2. Arrange the squash cubes in a single layer on the pan.
  3. In a small bowl, whisk together the olive oil, brown sugar, maple syrup, salt, and pepper.
  4. Drizzle the olive oil mixture over the squash and toss to coat evenly.
  5. Bake for 25-30 minutes, stirring every 10 minutes, until the squash is tender and browned.
  6. Sprinkle with parsley if desired, then serve.
