Roasted Butternut Squash

Ingredients

The squash

  • 1 medium butternut squash

The seasoning

  • 2 teaspoon roasting oil or butter
  • ¼ teaspoon sea salt
  • teaspoon ground black pepper

Optional toppings

  • 1-2 tablespoon maple syrup
  • ¼ to ½ teaspoon cinnamon
  • ⅛ to ¼ teaspoon nutmeg
  • to taste nuts like pecans or walnuts

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Cut the ends off the squash and slice it in half lengthwise.
  3. Scoop out the seeds from the squash.
  4. Brush the cut sides with oil or butter and add any additional toppings if desired.
  5. Place the squash cut-side down on a parchment lined baking sheet.
  6. Bake for 45-50 minutes until soft.
  7. If using toppings, add them about 10 minutes before the end of baking.
  8. Turn the squash halves over and brush with the topping mixture, then continue roasting cut side up.
  9. Allow to cool and enjoy or use in your favorite recipes.
