Roasted Bacon and Butternut Squash

Ingredients

  • 6 slices bacon
  • 1 unit butternut squash, peeled and cubed 1-inch
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F and line a rimmed baking sheet with foil.
  2. Bake the bacon slices for 10 to 14 minutes until crispy, then transfer to a plate.
  3. Add the cubed butternut squash to the baking sheet and coat it in the bacon drippings, seasoning with salt and pepper.
  4. Bake the squash for 20 to 30 minutes until fork-tender.
  5. Crumble the bacon and add it back to the pan, baking for an additional minute to reheat before serving.
