Healthy Broccoli Cheddar Soup

Ingredients

The soup

  • 1 Tablespoon olive oil
  • ½ yellow onion chopped
  • 2 cloves garlic
  • 4 cups water
  • 1 can (15 oz.) white beans
  • ½ cup raw cashews (optional)
  • 1 pound broccoli florets
  • 1 large carrot shredded
  • to taste salt & black pepper

The cheese

  • 4 ounces extra sharp cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium-high heat and sauté the onion until softened.
  2. Add garlic and stir until fragrant.
  3. Blend white beans, water, and cashews (if using) until smooth, then add to the pot.
  4. Add broccoli, carrot, salt, and pepper, then bring to a boil.
  5. Lower the heat, cover, and simmer until broccoli is tender.
  6. Transfer about 3 cups of the soup to a blender and pulse to break down the broccoli, leaving some texture.
  7. Return the blended soup to the pot and stir in shredded cheese until melted.
  8. Adjust seasoning and serve warm with desired toppings.
