Healthy Broccoli Cheddar Soup

The cheese

extra sharp cheddar cheese
Instructions
- Heat olive oil in a large pot over medium-high heat and sauté the onion until softened.
- Add garlic and stir until fragrant.
- Blend white beans, water, and cashews (if using) until smooth, then add to the pot.
- Add broccoli, carrot, salt, and pepper, then bring to a boil.
- Lower the heat, cover, and simmer until broccoli is tender.
- Transfer about 3 cups of the soup to a blender and pulse to break down the broccoli, leaving some texture.
- Return the blended soup to the pot and stir in shredded cheese until melted.
- Adjust seasoning and serve warm with desired toppings.
