Linguine with Arugula, Garlic and Parmesan

Ingredients

The pasta

  • 12 ounces linguine or other dried pasta

The sauce

  • 3 Tablespoons olive oil or butter
  • 7 cloves garlic, peeled and thinly sliced
  • 5 ounces baby arugula
  • ½ cup freshly shredded or shaved Parmesan
  • cup toasted pine nuts

Instructions

  1. Cook the pasta al dente in salted water according to package instructions.
  2. While the pasta cooks, heat olive oil or melt butter in a pan and sauté the garlic until lightly golden.
  3. Once the pasta is cooked, drain it and combine it with the garlic oil mixture, arugula, and Parmesan cheese.
  4. Toss everything until well combined and serve immediately, topped with extra Parmesan and pine nuts if desired.
