Spicy Lemon Arugula Pasta

Ingredients

The pasta

  • 16 oz penne pasta

The sauce

  • ¼ cup olive oil
  • 6 cloves garlic
  • 1 tsp red chili flakes
  • 1 tsp sea salt

The toppings

  • 2-3 cups organic arugula
  • 1 whole lemon
  • ½ cup grated parmesan cheese

Instructions

  1. 1. Cook the pasta according to the package instructions and reserve ½ cup of pasta water.
  2. 2. While the pasta cooks, heat olive oil in a large pan over medium-low heat.
  3. 3. Add the mashed garlic to the pan and stir for about 2 minutes, being careful not to burn it.
  4. 4. Stir in red chili flakes and sea salt, cooking for another minute.
  5. 5. Remove the pan from heat and add the cooked pasta to the garlic oil mixture.
  6. 6. Mix in lemon juice, lemon zest, arugula, reserved pasta water, and parmesan cheese, stirring well.
  7. 7. Serve and enjoy!
