Ingredients

The pasta

  • 12 ounces linguine

The sauce

  • 1 tablespoon olive oil
  • ½ cup finely diced shallot or onion
  • 2 cloves garlic, finely minced
  • a pinch red pepper flakes (optional)
  • 4 cups diced zucchini
  • 2 cups cherry tomatoes, halved
  • 1 cup chicken or vegetable broth
  • to taste salt and pepper
  • 1 cup chopped fresh basil
  • ½ to 1 cup freshly grated Parmesan cheese

Instructions

  1. 1. Boil salted water and cook the linguine until al dente, then drain.
  2. 2. In a skillet, heat olive oil over medium heat, add onion, garlic, and red pepper flakes, and cook until translucent.
  3. 3. Add zucchini, tomatoes, broth, salt, and pepper to the skillet and simmer until softened.
  4. 4. Toss the drained pasta with the sauce, then add basil and Parmesan cheese before serving.
