Instructions
- Boil the pasta in salted water until al dente, then drain.
- In a skillet, heat olive oil and garlic over medium heat for about a minute.
- Add grated zucchini to the skillet and stir to coat with oil and garlic.
- Pour in the broth and lemon zest, cooking for about 5 minutes until the zucchini softens.
- Add parsley, lemon juice, salt, and pepper, mixing well.
- Combine the cooked pasta with the zucchini mixture and sprinkle with Parmesan cheese before serving.
