Ingredients

The pasta

  • 8–10 ounces pasta

The sauce

  • 5 cloves garlic
  • 3 tablespoons olive oil
  • 1.5 pounds zucchini
  • ½ cup chicken or veggie broth
  • 1 whole lemon
  • ½ to 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 bunch parsley
  • ½ cup Parmesan cheese

Instructions

  1. Boil the pasta in salted water until al dente, then drain.
  2. In a skillet, heat olive oil and garlic over medium heat for about a minute.
  3. Add grated zucchini to the skillet and stir to coat with oil and garlic.
  4. Pour in the broth and lemon zest, cooking for about 5 minutes until the zucchini softens.
  5. Add parsley, lemon juice, salt, and pepper, mixing well.
  6. Combine the cooked pasta with the zucchini mixture and sprinkle with Parmesan cheese before serving.
