Lemon Garlic Zucchini Noodles

Ingredients

The noodles

  • 2 Medium Zucchini, spiralized

The sauce

  • 1 Tbsp Olive Oil
  • 1 Small Sweet Onion, sliced in half rings
  • 3 cloves Garlic
  • 1 Tbsp Butter
  • ½ Lemon Zest, about 1 Tbsp
  • ½ Lemon Juice, about 2 Tbsp
  • ¼ tsp Red Pepper Flakes
  • ½ tsp Kosher Salt
  • ¼ tsp Black Pepper
  • 1 ½ cups Vegetable Broth
  • ½ cup Parmesan Cheese, grated, plus some for garnish
  • to taste Parsley for garnish

Instructions

  1. Spiralize the zucchini and place the noodles in a bowl lined with a paper towel.
  2. Heat a frying pan on medium-high heat and add olive oil.
  3. Sauté the onion until translucent.
  4. Add garlic and butter, cooking briefly to avoid burning.
  5. Stir in lemon juice, zest, red pepper flakes, black pepper, salt, and half of the broth, then cook until reduced by a third.
  6. Add the remaining broth and cook for a few more minutes, adjusting seasonings to taste.
  7. Add the zucchini noodles and stir gently to coat with the sauce.
  8. Cook the noodles for 3-5 minutes until tender but still slightly crunchy.
  9. Stir in Parmesan cheese and serve garnished with parsley and additional Parmesan.
