Instructions
- Spiralize the zucchini and place the noodles in a bowl lined with a paper towel.
- Heat a frying pan on medium-high heat and add olive oil.
- Sauté the onion until translucent.
- Add garlic and butter, cooking briefly to avoid burning.
- Stir in lemon juice, zest, red pepper flakes, black pepper, salt, and half of the broth, then cook until reduced by a third.
- Add the remaining broth and cook for a few more minutes, adjusting seasonings to taste.
- Add the zucchini noodles and stir gently to coat with the sauce.
- Cook the noodles for 3-5 minutes until tender but still slightly crunchy.
- Stir in Parmesan cheese and serve garnished with parsley and additional Parmesan.
