The Zoodles

Instructions

  1. Spiralize the zucchini using a spiralizer or cut it into thin ribbons by hand.
  2. If desired, toss the zoodles with kosher salt and let them sit in a strainer for about 1 hour to expel excess water.
  3. After draining, blot the zoodles with paper towels to remove any remaining moisture.
  4. Heat olive oil in a pan over medium-high heat.
  5. Add the zoodles to the pan and sauté them for a few minutes until just tender.
  6. Serve immediately with your choice of sauce or toppings.
