Lemon-Garlic Zucchini Noodles

Ingredients

The noodles

  • 4 large zucchinis

The sauce

  • 1 Tbsp olive oil
  • 2 medium shallots
  • 4 cloves garlic
  • 2 cups chicken broth
  • ½ cup half and half
  • 4 Tbsp lemon juice
  • 1 medium lemon zest
  • 1 tsp red pepper flakes
  • ½ tsp sea salt
  • 1 tsp pepper
  • ¼ cup shredded Parmesan cheese

Instructions

  1. Spiralize the zucchinis and set aside to soak up excess water.
  2. In a large skillet, heat olive oil and sauté shallots and garlic until fragrant.
  3. Add chicken broth, half and half, lemon juice, lemon zest, red pepper flakes, salt, and pepper to the skillet.
  4. Bring the mixture to a boil, then cover and reduce heat to low, allowing it to simmer until reduced by half, about 15 minutes.
  5. Add the zucchini noodles to the sauce and cook for an additional 3 to 5 minutes, depending on desired doneness.
  6. Remove from heat and sprinkle with Parmesan cheese before serving.
