Instructions
- Spiralize the zucchinis and set aside to soak up excess water.
- In a large skillet, heat olive oil and sauté shallots and garlic until fragrant.
- Add chicken broth, half and half, lemon juice, lemon zest, red pepper flakes, salt, and pepper to the skillet.
- Bring the mixture to a boil, then cover and reduce heat to low, allowing it to simmer until reduced by half, about 15 minutes.
- Add the zucchini noodles to the sauce and cook for an additional 3 to 5 minutes, depending on desired doneness.
- Remove from heat and sprinkle with Parmesan cheese before serving.
