Ingredients

The crust

  • 1 cup walnuts
  • 1 cup pitted dates

The filling

  • cups cashews
  • Tbsp coconut oil
  • ¼ cup agave nectar or maple syrup
  • 1 medium just ripe banana
  • cup full-fat coconut milk
  • ½ tsp pure vanilla extract
  • ¼ tsp sea salt
  • 2-3 Tbsp lemon juice

Instructions

  1. Process dates until small bits remain and form a ball, then set aside.
  2. Process walnuts until they reach a meal consistency, then mix with dates and a pinch of salt.
  3. Press the mixture into a springform pan or lined baking dish, then freeze to set.
  4. Blend all filling ingredients until smooth and creamy, adding more agave or water if needed.
  5. Taste and adjust seasonings, then pour the filling into the crust and smooth it out.
  6. Cover and freeze until set, about 4-6 hours.
  7. Let thaw for 5 minutes before serving, and top with coconut whipped cream, crushed peanuts, and caramel sauce if desired.
