Vegan Banana Cream Pie

Instructions
- Process dates until small bits remain and form a ball, then set aside.
- Process walnuts until they reach a meal consistency, then mix with dates and a pinch of salt.
- Press the mixture into a springform pan or lined baking dish, then freeze to set.
- Blend all filling ingredients until smooth and creamy, adding more agave or water if needed.
- Taste and adjust seasonings, then pour the filling into the crust and smooth it out.
- Cover and freeze until set, about 4-6 hours.
- Let thaw for 5 minutes before serving, and top with coconut whipped cream, crushed peanuts, and caramel sauce if desired.
