Raw Strawberry Margarita Cheesecake

Ingredients

The crust

  • ½ cup macadamia nuts
  • ½ cup walnuts
  • ½ cup pecans
  • ½ cup dates
  • ¼ teaspoon Himalayan pink salt

The filling

  • 3 cups cashews, soaked overnight
  • 1 cup date paste
  • 2 cups fresh strawberries
  • ½ cup almond milk or milk of choice
  • ¾ cup coconut oil
  • ¼ cup lime juice

Garnish (optional)

  • as needed sliced fresh strawberries
  • as needed sliced limes
  • as needed Vanilla Coconut Cream Garnish

Instructions

  1. Soak cashews overnight in plenty of water.
  2. Blend crust ingredients until well chopped and mix into muffin tins.
  3. Press down the mixture to form a firm crust.
  4. Blend filling ingredients until smooth and creamy.
  5. Spoon filling over the crust in muffin tins.
  6. Freeze for at least 2 hours or overnight.
  7. Remove from freezer 10 minutes before serving.
  8. Garnish with sliced strawberries, limes, and/or coconut cream.
