Instructions
- Soak cashews overnight in plenty of water.
- Blend crust ingredients until well chopped and mix into muffin tins.
- Press down the mixture to form a firm crust.
- Blend filling ingredients until smooth and creamy.
- Spoon filling over the crust in muffin tins.
- Freeze for at least 2 hours or overnight.
- Remove from freezer 10 minutes before serving.
- Garnish with sliced strawberries, limes, and/or coconut cream.
