Veggie Teriyaki Stir-Fry with Noodles
Ingredients
The noodles

soba noodles, brown rice noodles, spaghetti or long noodle of choice
The stir-fry

extra-virgin olive oil or avocado oil

red or white onion, halved and thinly sliced

fine sea salt

thinly sliced mixed vegetables

teriyaki sauce

toasted sesame oil, to taste

sesame seeds, plus more for garnish

Instructions
- Boil water and cook the noodles until al dente, then drain and rinse.
- In a skillet, heat oil, add onion and salt, and cook until tender.
- Add mixed vegetables and cook until tender and caramelized.
- Mix in the cooked noodles and teriyaki sauce, stir to combine, and heat through.
- Remove from heat and add toasted sesame oil and sesame seeds.
- Serve in bowls, garnished with green onion and sesame seeds.
