Instructions
- Boil water in a medium pot and cook the soba noodles according to package instructions, then drain and rinse with cold water.
- In a medium bowl, whisk together the teriyaki sauce ingredients until combined and set aside.
- Preheat a large skillet or wok over medium-high heat and add the oil.
- Sauté the broccoli, celery, and red pepper for about 7-10 minutes until almost tender.
- Add the julienned carrots and edamame (if using) and sauté for an additional couple of minutes.
- Mix the drained noodles into the skillet with the sautéed vegetables and pour in the teriyaki sauce, cooking until the sauce thickens slightly and the carrots soften.
- Serve immediately, garnished with sliced green onions and sesame seeds.
