Speedy Veggie Noodle Bowl

Ingredients

Teriyaki Sauce

  • 3 tablespoons rice vinegar
  • 3 tablespoons low-sodium tamari
  • 1 tablespoon untoasted sesame oil
  • 1 tablespoon natural cane sugar
  • 2 large garlic cloves, grated
  • teaspoons minced fresh ginger
  • ½ teaspoon red pepper flakes
  • to taste freshly ground black pepper
  • 1 teaspoon potato starch or cornstarch

Noodle Bowl

  • ½ box soba noodles
  • 2 tablespoons coconut oil or untoasted sesame oil
  • cups broccoli florets
  • 3 stalks celery, chopped
  • 1 large red pepper, thinly sliced
  • 2 to 3 large carrots, peeled and julienned
  • 3 to 4 green onions, chopped
  • ¾ to 1 cup shelled edamame (optional)
  • to taste sesame seeds, for garnish

Instructions

  1. Boil water in a medium pot and cook the soba noodles according to package instructions, then drain and rinse with cold water.
  2. In a medium bowl, whisk together the teriyaki sauce ingredients until combined and set aside.
  3. Preheat a large skillet or wok over medium-high heat and add the oil.
  4. Sauté the broccoli, celery, and red pepper for about 7-10 minutes until almost tender.
  5. Add the julienned carrots and edamame (if using) and sauté for an additional couple of minutes.
  6. Mix the drained noodles into the skillet with the sautéed vegetables and pour in the teriyaki sauce, cooking until the sauce thickens slightly and the carrots soften.
  7. Serve immediately, garnished with sliced green onions and sesame seeds.
