Veggie Sesame Noodles

Ingredients

The noodles and seeds

  • 8 ounces soba noodles or spaghetti noodles
  • ¼ cup raw sesame seeds

The sauce

  • cup reduced sodium tamari or soy sauce
  • ¼ cup toasted sesame oil
  • 2 tablespoons lime juice
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic
  • ½ teaspoon red pepper flakes

The vegetables

  • 2 ½ cups thinly sliced red cabbage
  • 3 whole carrots
  • 1 whole red bell pepper
  • 1 bunch green onions
  • ½ cup chopped cilantro
  • 2 cups shelled edamame (optional)

Instructions

  1. Cook the soba noodles according to the package directions, then drain and rinse them under cool water.
  2. Toast the sesame seeds in a skillet over medium heat until fragrant and golden, then set aside.
  3. In a bowl, whisk together the tamari, sesame oil, lime juice, ginger, garlic, and red pepper flakes.
  4. In a large bowl, combine the noodles with the cabbage, carrots, bell pepper, green onions, cilantro, and optional edamame.
  5. Drizzle the dressing over the mixture, add the sesame seeds, and toss to combine.
  6. Serve immediately or refrigerate for later.
