Instructions
- Cook the soba noodles according to the package directions, then drain and rinse them under cool water.
- Toast the sesame seeds in a skillet over medium heat until fragrant and golden, then set aside.
- In a bowl, whisk together the tamari, sesame oil, lime juice, ginger, garlic, and red pepper flakes.
- In a large bowl, combine the noodles with the cabbage, carrots, bell pepper, green onions, cilantro, and optional edamame.
- Drizzle the dressing over the mixture, add the sesame seeds, and toss to combine.
- Serve immediately or refrigerate for later.
