Sesame Noodles

Ingredients

The noodles and veggies

  • 1–2 tablespoons oil
  • 4 cloves garlic, rough chopped
  • 1 tablespoon ginger, chopped
  • ½ an onion sliced
  • 4 cups veggies (cabbage, peppers, broccoli, mushrooms, asparagus, snow peas, etc.) cut small
  • 4–6 ounces dry soba noodles (or sub buckwheat noodles, chow mein noodles, low mein, spaghetti, gluten-free noodles, etc.)

The creamy sesame sauce

  • 3 tablespoons soy sauce (Or GF Braggs Liquid Aminos)
  • 3 tablespoons tahini paste, or Chinese Sesame Paste
  • 1–2 tablespoons water, more as needed
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon maple syrup (or honey)
  • 1–2 teaspoons chili paste or sriracha, more to taste
  • to taste salt and pepper

Garnish

  • to taste scallions
  • to taste cilantro
  • to taste toasted sesame seeds
  • to taste sprouts
  • to taste roasted peanuts
  • to taste sliced cucumber or radish

Instructions

  1. Cook the noodles according to package directions.
  2. In a large skillet, heat oil over medium heat and sauté onion, garlic, ginger, and chosen veggies for 3-4 minutes, then lower the heat and cook until tender.
  3. Prepare the creamy sesame sauce by whisking all sauce ingredients in a bowl until smooth, adjusting thickness with water as needed.
  4. Combine the cooked noodles, sautéed veggies, and sesame sauce, mixing well.
  5. Serve warm, garnished with microgreens, scallions, peanuts, or other garnishes as desired.
