The creamy sesame sauce

soy sauce (Or GF Braggs Liquid Aminos)

tahini paste, or Chinese Sesame Paste

water, more as needed

rice wine vinegar

maple syrup (or honey)

chili paste or sriracha, more to taste

Instructions
- Cook the noodles according to package directions.
- In a large skillet, heat oil over medium heat and sauté onion, garlic, ginger, and chosen veggies for 3-4 minutes, then lower the heat and cook until tender.
- Prepare the creamy sesame sauce by whisking all sauce ingredients in a bowl until smooth, adjusting thickness with water as needed.
- Combine the cooked noodles, sautéed veggies, and sesame sauce, mixing well.
- Serve warm, garnished with microgreens, scallions, peanuts, or other garnishes as desired.
