Ingredients

The noodles

  • 8 oz soba noodles

The dressing

  • ΒΌ cup soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tbsp sesame seeds

The vegetables (optional)

  • 1 cup mixed vegetables

Instructions

  1. Cook the soba noodles according to package instructions, then drain and rinse with cold water.
  2. In a bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, and minced garlic.
  3. Toss the cooked noodles with the dressing until well coated.
  4. Add in any optional vegetables and toss again.
  5. Sprinkle with sesame seeds before serving.
