The sauce

Chinese sesame paste or Tahini paste

vinegar (apple cider, balsamic, black or Chinese rice vinegar)

Instructions
- Cook the noodles according to package instructions, then rinse in cold water and drain.
- Mix all ingredients for the sesame sauce in a bowl and stir to combine.
- Heat oil in a pan over medium heat, add the noodles and stir quickly.
- Add the sesame sauce to the noodles and stir to combine well.
- Garnish with sesame seeds and chopped scallions, then serve at room temperature or chill before serving.
