Sesame Noodles

Ingredients

The noodles

  • 8 oz spaghetti or soba noodles
  • to taste water for boiling
  • 2 tablespoons oil
  • to taste none black and white sesame seeds, for garnishing
  • to taste none scallions, chopped, for garnishing

The sauce

  • 2 ½ tablespoons Chinese sesame paste or Tahini paste
  • 1 tablespoon peanut butter
  • 1 ½ tablespoons sweet soy sauce
  • 1 teaspoon vinegar (apple cider, balsamic, black or Chinese rice vinegar)
  • 1 tablespoon pure toasted sesame oil
  • 1 tablespoon chili oil (optional)
  • to taste none salt and sugar

Instructions

  1. Cook the noodles according to package instructions, then rinse in cold water and drain.
  2. Mix all ingredients for the sesame sauce in a bowl and stir to combine.
  3. Heat oil in a pan over medium heat, add the noodles and stir quickly.
  4. Add the sesame sauce to the noodles and stir to combine well.
  5. Garnish with sesame seeds and chopped scallions, then serve at room temperature or chill before serving.
