Spicy Sesame Basil Noodles

Ingredients

The noodles

  • 1 pound linguine or other egg noodle pasta

The sauce

  • 3 tablespoons toasted sesame oil
  • ½ cup tahini
  • 6 tablespoons soy sauce
  • ¼ cup hot chili oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar

The vegetables

  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, minced or grated
  • 2 carrots cut into matchsticks
  • 4 cups mung bean sprouts
  • 4 ounces mushrooms, sliced
  • 8 green onions chopped
  • cup fresh basil, chopped

The toppings

  • ½ cup roasted peanuts, roughly chopped
  • to taste sesame seeds

Instructions

  1. 1. Boil salted water and cook the pasta until al dente, then drain and rinse with cold water.
  2. 2. In a bowl, mix 2 tablespoons of sesame oil, tahini, soy sauce, hot chili oil, balsamic vinegar, and brown sugar.
  3. 3. Heat a skillet over medium-high heat and add the remaining sesame oil.
  4. 4. Sauté ginger and garlic for about 30 seconds, then add carrots, mung bean sprouts, and mushrooms, cooking until tender-crisp.
  5. 5. Add the noodles to the skillet and toss with the vegetables until warmed through.
  6. 6. Pour the sauce over the noodles and mix well.
  7. 7. Stir in basil, green onions, and peanuts, then serve warm or at room temperature, topped with sesame seeds.
