Instructions
- Boil water and cook the rice noodles according to package instructions until al dente.
- In a skillet, heat olive oil and sesame oil over medium heat, then add shallots and garlic, cooking for 4-5 minutes.
- Add ginger and the white part of the scallions, cooking for an additional minute.
- Stir in soy sauce, chili garlic sauce, sweet chili sauce, brown sugar, and rice vinegar, cooking for 60 seconds before removing from heat.
- Drain the cooked noodles and add them to a large bowl.
- Mix the chili garlic sauce with the drained noodles thoroughly.
- Taste and adjust seasonings as needed, then garnish with green onion tops and sesame seeds.
