Ingredients

The noodles

  • 8 ounces rice noodles

The sauce

  • 1 tablespoon olive oil or vegetable oil
  • 1 tablespoon sesame oil
  • 2 tablespoons shallot, finely minced
  • 2 tablespoons garlic, finely minced
  • 1 tablespoon fresh ginger paste or grated
  • 2-3 tablespoons green onions, chopped (white part only)
  • ΒΌ cup low sodium soy sauce or regular soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons chili garlic sauce
  • 2 tablespoons sweet chili sauce or 1 tablespoon sriracha
  • 1 tablespoon light brown sugar

Garnishes

  • 2-3 tablespoons green onion tops, optional
  • 1 tablespoon toasted sesame seeds, optional

Instructions

  1. Boil water and cook the rice noodles according to package instructions until al dente.
  2. In a skillet, heat olive oil and sesame oil over medium heat, then add shallots and garlic, cooking for 4-5 minutes.
  3. Add ginger and the white part of the scallions, cooking for an additional minute.
  4. Stir in soy sauce, chili garlic sauce, sweet chili sauce, brown sugar, and rice vinegar, cooking for 60 seconds before removing from heat.
  5. Drain the cooked noodles and add them to a large bowl.
  6. Mix the chili garlic sauce with the drained noodles thoroughly.
  7. Taste and adjust seasonings as needed, then garnish with green onion tops and sesame seeds.
