Ingredients

The noodles

  • 8 ounces rice noodles

The stir fry

  • 2 teaspoons canola oil
  • 10 ounces frozen stir fry vegetables
  • 1 cup frozen edamame

The sauce

  • cup creamy peanut butter
  • ¼ cup reduced sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon sriracha
  • 2 teaspoons toasted sesame oil
  • ¼ cup water or vegetable broth

The garnish

  • ¼ cup fresh chopped cilantro
  • 1 bunch green onions
  • to taste toasted sesame seeds

Instructions

  1. Cook the rice noodles according to package instructions until tender, then drain and set aside.
  2. Heat a large skillet over medium-high heat and add canola oil.
  3. Add the frozen stir fry vegetables and edamame, cooking for 3-4 minutes until thawed and cooked through.
  4. Make the peanut sauce by whisking together peanut butter, soy sauce, rice vinegar, chili garlic sauce, sriracha, and sesame oil in a bowl, adding water gradually until smooth.
  5. In a large bowl, toss the cooked noodles with the peanut sauce, then add the stir-fried vegetables, edamame, cilantro, and green onions.
  6. Garnish with toasted sesame seeds before serving.
