Instructions
- Cook the rice noodles according to package instructions until tender, then drain and set aside.
- Heat a large skillet over medium-high heat and add canola oil.
- Add the frozen stir fry vegetables and edamame, cooking for 3-4 minutes until thawed and cooked through.
- Make the peanut sauce by whisking together peanut butter, soy sauce, rice vinegar, chili garlic sauce, sriracha, and sesame oil in a bowl, adding water gradually until smooth.
- In a large bowl, toss the cooked noodles with the peanut sauce, then add the stir-fried vegetables, edamame, cilantro, and green onions.
- Garnish with toasted sesame seeds before serving.
