Instructions
- Soak the rice noodles in hot water according to package directions.
- Combine all sauce ingredients in a bowl and whisk until well blended.
- Heat olive oil in a wok over high heat, then add chicken and cook until golden and cooked through.
- Add green onions and sauté for about 30 seconds.
- Add broccoli, bean sprouts, snow peas, and chili peppers, cooking until slightly softened.
- Add soaked noodles to the wok and toss continuously until cooked to your liking.
- Add the sauce and peanuts, toss to combine, and serve immediately.
