Ingredients

The noodles and chicken

  • 10 oz rice noodles
  • 1-2 tbsp extra virgin olive oil
  • 2 medium boneless skinless chicken breasts, cut into bite-size chunks
  • 3 pieces green onions, sliced
  • 1 crown broccoli, cut into tiny florets
  • 1 cup bean sprouts
  • 20 pieces snow peas
  • 2 pieces bird’s eye chili peppers, finely chopped
  • ½ cup roasted peanuts

The sauce

  • ¼ cup all natural peanut butter
  • ¼ cup water
  • 3 tbsp rice vinegar
  • 2 tbsp toasted sesame oil
  • 2 tbsp tamari
  • 1 tbsp honey
  • 1 tbsp sambal oelek
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced

Instructions

  1. Soak the rice noodles in hot water according to package directions.
  2. Combine all sauce ingredients in a bowl and whisk until well blended.
  3. Heat olive oil in a wok over high heat, then add chicken and cook until golden and cooked through.
  4. Add green onions and sauté for about 30 seconds.
  5. Add broccoli, bean sprouts, snow peas, and chili peppers, cooking until slightly softened.
  6. Add soaked noodles to the wok and toss continuously until cooked to your liking.
  7. Add the sauce and peanuts, toss to combine, and serve immediately.
