Instructions
- 1. Boil 4 quarts of water with ½ teaspoon salt and cook the noodles according to package directions for about 5 to 7 minutes, then drain.
- 2. In a large bowl, whisk together the chicken broth, peanut butter, honey, soy sauce, crushed red pepper, ginger, and garlic until smooth.
- 3. Add the cooked noodles, chicken, and carrots to the sauce and toss until everything is evenly coated.
- 4. Sprinkle with scallions and peanuts before serving.
