Thai Peanut Chicken and Noodles

Ingredients

The noodles

  • 8 ounces spaghetti

The sauce

  • cup chicken broth
  • cup creamy peanut butter
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1-2 teaspoons red chili flakes
  • 1 teaspoon ground ginger
  • 1 clove garlic, minced

The vegetables and protein

  • 2 cups cooked chicken
  • 2 cups carrots, peeled and sliced
  • ¼ cup scallions, sliced
  • ¼ cup peanuts, chopped

Instructions

  1. 1. Boil 4 quarts of water with ½ teaspoon salt and cook the noodles according to package directions for about 5 to 7 minutes, then drain.
  2. 2. In a large bowl, whisk together the chicken broth, peanut butter, honey, soy sauce, crushed red pepper, ginger, and garlic until smooth.
  3. 3. Add the cooked noodles, chicken, and carrots to the sauce and toss until everything is evenly coated.
  4. 4. Sprinkle with scallions and peanuts before serving.
