Ingredients

The noodles and vegetables

  • 1 lb whole wheat spaghetti
  • 1 cup cooked chicken, chopped
  • 1 unit red pepper, julienned
  • ½ cup green onions, sliced

The sauce

  • 4 Tablespoons reduced fat peanut butter
  • 6 Tablespoons fresh lime juice
  • 3 Tablespoons low sodium soy sauce
  • 2 Tablespoons brown sugar
  • ¼ cup basil, chopped
  • ¼ cup cilantro, chopped
  • ½ teaspoon ground ginger
  • ¼ teaspoon red pepper flakes
  • to taste unit sesame seeds for garnish

Instructions

  1. Mix the peanut butter, lime juice, soy sauce, brown sugar, cilantro, basil, ginger, and red pepper flakes in a bowl until smooth.
  2. Boil water in a large pot and cook the spaghetti until al dente, about 8-10 minutes.
  3. Drain the spaghetti and combine it with the chicken, red pepper, green onions, and the peanut sauce, tossing to coat.
  4. Garnish with sesame seeds before serving.
