Ingredients

The noodles and toppings

  • 12 oz whole grain spaghetti noodles
  • 1 cup cooked shredded chicken
  • 1 each red bell pepper, thinly sliced
  • 3 each green onions, sliced
  • ¼ cup fresh cilantro, chopped
  • 3 tbsp fresh basil, chopped
  • ¼ cup chopped peanuts
  • as needed none sesame seeds, as garnish

The peanut sauce

  • cup all-natural creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 3 tbsp hot water
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp chili garlic paste
  • tbsp honey
  • 1 tbsp fresh ginger, grated or minced

Instructions

  1. Boil a large pot of salted water.
  2. While the water boils, prepare the sauce by whisking together all sauce ingredients until smooth.
  3. Add the noodles to the boiling water and cook until al dente, then drain.
  4. In a large bowl, combine the drained noodles, chicken, bell pepper, green onions, and fresh herbs.
  5. Drizzle the peanut sauce over the mixture and toss until well coated.
  6. Garnish with chopped peanuts and sesame seeds before serving.
